Coho Troll Oncorhynchus Kisutch | Silver salmon or Silver.
Belonging to the genus Oncorhynchus, translated from the Greek for the lower hook jaw typical of male salmon during the mating season, is the Coho or Silver. Though smaller in size than the Red King, it is still highly sought after. It is the lowest in fat among all wild salmon and so the meat is firm and compact, of a beautiful color and with a delicate, sweet taste.
Coho Troll Prince®
Caught in Alaskan waters and easily recognizable for its light silver mantle. When adult it is small, in fact, after processing, the fillet tops out at little more than two kilos.
It comes with a decidedly rosy meat and a particularly delicate taste.
This product is perfect for low weekly consumption. As with the other varieties of salmon on the price list, it is smoked in the place of origin and is selected after smoking.
